Time for this week’s dinner ideas! You’ll notice a few repeats on the menu this week – when we find a recipe we love, I like making it semi-regularly because I know my kids will happily eat it.
Here’s a quick review of our weekly dinners:

Italian Sausage Pasta
Everyone loves sausage and pasta! This one was hearty and flavorful and delicious.
Beef Noodles
This is one of our favorite crockpot meals. It’s easy and light and tasty. I omit the cream of celery soup and do chopped up celery, so it’s a clear broth instead of creamy. Super good!
Italian Melt
I’m loving doing a sandwich dinner every week right now, and this one was so good. My kids gobbled it up!
BBQ Chicken Pizza
This is our favorite homemade pizza. I do Sweet Baby Rays BBQ sauce, grilled chicken, frozen corn, fresh jalapeños, and fiesta blend cheese. Then we top with a drizzle of bbq sauce and crispy onions to serve. Delicious! I always use Mel’s Kitchen Cafe’s pizza dough.
Beef Enchiladas
I’ve been making these enchiladas for 15 years of our marriage and we still haven’t gotten sick of them! They’re super good and easy to make. I shared the recipe in THIS weekly menu.
Peach Ice Cream
It’s been rainy and cooler this week, but we still wanted one more summer hurrah with homemade ice cream! We have some gorgeous peaches that I put in the freezer and we’ll be using those to make this yummy grilled peach ice cream.

For the beef noodles, did you cook the roast for 8 hours overnight And then an ADDITIONAL 8 hours tHe next day like the recipe states? Seems a bit much and wOndering if i Can just cook if for 8 hours and then add the noodles?
