Time for this week’s dinner ideas! We are back in the swing of things with school in session and it was good to get in some really good dinners this week!

Time for this week’s dinner ideas! It was a great week of the boys being back in school full time and it felt good to get back on a routine. We had some fantastic dinners this week including an amazing gyoza soup recipe!

Gyoza Soup

This was a new recipe this week and it was delicious! I bought pre-made pork gyoza from Trader Joes (I already knew my family loved those) and that made it super easy to throw together. I made two bags of gyoza and served them on the plate, and some of my kids preferred to eat them separately instead of putting them in the soup.

Sausage and Pepper Pasta

I make this dinner fairly regularly. My kids don’t love the peppers, but I always make the pasta and keep it separate so they can eat the noodles, and then pull a few pieces of sausage out of the sauce. It works and everyone’s happy. The recipe calls for spicy sausage, but I always do mild,

Omelets

You don’t need a recipe to make a good omelet – just toss whatever veggies or cheese or meat in there that you’ll like. We always serve ours with salsa over the top, and tortilla chips on the side. Yum!

Tortellini Soup

This is the best tortellini soup ever. It’s easy to make and my kids all love it. Plus it has tons of veggies!

Pork Tingas Tacos

This is a great Sunday dinner. Toss it in the crockpot, and pretty soon your house smells like heaven. We serve with crunchy shells or homemade flour tortillas, avocado, and fresh cheese.

Caramel Fudge Brownies

We’re having these caramel fudge brownies for Sunday dessert and I cannot wait – they look amazing. I’m serving them with vanilla ice cream, of course.

    I’m really curious about the politics there. it’s hard to imagine living in the thick of what i’m seeing on the news. especially with covid and the new abortion law. Do you see this in your every day life interacting with those around you? I’m not on either side but am very much in the middle, curious to know what it’s really like there.
