Time for this week’s dinner ideas! This week’s meals were perfectly easy, quick, and delicious for a busy schedule!

Our weekly menu will give you some good dinner ideas! Here’s a quick review of what I cooked this week for our family dinners.

Monday: Meatball Sub Sandwiches

I made spaghetti and meatballs last week for dinner, and made a ton on purpose so we’d have leftovers this week. I turned it into a new meal by making meatball sub sandwiches, and everyone was happy with this dinner! I served with fruit and a roasted veggie.

Tuesday: Leftovers

Wednesday: Chick Fil A

I intended to cook dinner this night, but Philip was out of town and I had taken the kids to the doctor for check ups, and I knew I’d be running them to sports and church activities pretty soon, so we just made dinner easy and grabbed it on our way home. They were thrilled, of course!

Thursday: Brisket and Egg Tacos

We had a brisket in our freezer from a few months ago, and pulled that out at Easter to have with our Easter ham. I’ve been trying to get through the rest of it, so I pulled it out on Thursday, chopped it up, and made with eggs for some yummy breakfast brisket tacos. Everyone loved these.

Friday: Ham and pineapple pizza

We also had leftover ham from Easter, so I made ham and fresh pineapple pizza for our Friday pizza night. So yummy!

Saturday: Out to eat

Sunday: Green chile pork

This is one of our favorite Sunday dinners! So flavorful, so yummy, and easy to throw in the crockpot and it’s done at the end of the day. I always serve with homemade tortillas and fresh cheese.
