This week we road tripped down to the beach in South Texas to do Thanksgiving. Here’s what we cooked while we were staying at our Airbnb.

We stayed in an Airbnb in Galveston this week for Thanksgiving break, and even though we were on vacation, I cooked a few things. Here was our simple weekly menu.

Breakfast Sandwiches

We made these yummy breakfast sandwiches one of the days at our Airbnb. They don’t require many ingredients, and they’re super filling and delicious.

Green chile pork in the crockpot

I made this recipe one day when we were going to spend the whole day at the beach. It takes a little time to roast the veggies and brown the pork, but then it cooked all day and was ready to go when we got home that evening.

I made THESE easy fresh tortillas and served them with the pork. We topped it with fresh cheese!

Basic crepes

We had crepes on Thanksgiving for brunch, and I intended to use another recipe, but we didn’t bring or buy any milk. So I found this recipe that used water instead and it was easy and they were delicious!

We served with strawberries, bananas, nutella, and whipped cream.

Blackberry Crisp

We didn’t cook Thanksgiving dinner, but we did cook dessert. I made this amazing blackberry crisp in a pie dish and we served it with vanilla ice cream. It was the perfect ending to our Thanksgiving feast!
