It’s time for another weekly menu! This week we made a few old favorites, like New Orleans red beans and rice and Navajo tacos, and we also tried a new soup and are making a new lemon dessert tonight.

Fry bread

I made this recipe a few months ago and when I told the boys I was making it again they were ECSTATIC. It’s super simple, but the puffy scone-like bread is just fun and feels special.

We topped with homemade salsa and homemade guacamole and it was DELISH.

Chicken and Rice Soup

I don’t know if I’ve ever made chicken and rice soup like this, but it was so simple and super delicious. Basically like a creamy chicken noodle soup, but with rice instead of egg noodles.

The evaporated milk made it creamy and yummy. My boys all loved this!

Pancakes for dinner

Pancakes weren’t originally on my menu for this week, but I had two crockpot meals on my menu and one day I forgot to put it in the crockpot in the morning. So pancakes for dinner it was!

These are the most delicious pancakes EVER. I’ve never been a big pancake fan — they’re usually kind of gummy/chewy to me, but these ones are light and fluffy inside and crispy on the outside. We love them with chocolate chips too 😉

Slow Cooker Chicken Cacciatore

I’ve had a good chicken cacciatore recipe for ages, but I love trying new recipes so we gave this one a go. It was super simple — just toss everything in the crockpot and go.

I served it over angel hair pasta and my kids gobbled it up, veggies and all!

Red Beans and Rice

This red beans and rice dish is another slow cooker dish and grreat for Sunday dinner. It’s is an old favorite that I’ve made for years and is one of Philip’s very favorite meals that I make.

Tip: add the sausage only in the last hour of cooking. If you cook it for the full time, it kind of disintegrates and gets mushy. 

I serve it over white rice with cornbread!

We’ve been trying lots of new dessert recipes lately. This one looks DIVINE and we’re so excited to make it for Sunday dessert tonight.
