As part of my constant effort to become more like Nie, I spent the weekend cooking and creating. Unfortunately, I’m not as good as she is at taking photos of everything. I actually took pictures of nothing, and my camera sat in my purse the entire time. So sad.

I had two baby showers on Saturday, so I took the opportunity to make some “custom made” gifts (I don’t like the images that come to mind when I say “home-made”). Remember the gift (scroll down to the bottom) I gave Janssen for her birthday? Well she gave me the great idea to do this for people as baby gifts. I just love Classic Pooh, and it’s so perfect for baby room decor (especially pen and ink..in a black or white frame…matches with EVERYTHING). So my Friday night and Saturday morning were spent in creating these two little gifts. I wish I had pictures, cause I think they turned out so cute. I didn’t do the same bathtub scene…this one was Christopher Robin, Pooh, and Piglet, fishing off of a little wooden bridge.

In the midst of pen, ink, paper, and frames flying around the house, I somehow managed to make some delicious homemade granola. Remember this disaster? No worries..it turned out much better than that. I’ll post the recipe up here sometime.

After a day of showers, food storage shopping, laundry, and house cleaning, I finally got around to dinner. I made some homemade pizza dough (so easy…1 cup water, 2 cups flour, 1 TBSP yeast, 1 tsp salt) and defrosted some chicken, and headed off to Deborah and Sam’s for Pizza Night. I think I might make this a weekly tradition. Philip’s never been a big fan of homemade pizza, but he said this was the best he’d ever tasted (what a nice husband). We made 2 pizzas, topped with sauce, fresh mozzarella, grilled chicken, sliced tomatoes, mushrooms, and then I put some sliced avacados ontop after it finished cooking, in honor of Nie.

Does that look DELICIOUS or what? Yes, so was mine.

This weekend I also made homemade croutons (Delicious)for my salads for lunch this week, Sunday dinner in the crockpot (which I turn on high, NOT low, and ended up with shriveled and burned chicken), and a replacement last-minute Sunday dinner (vegetable-heaping tacos with homemade chips and salsa). I also thought about Monday lunches BEFORE 10pm…defrosted chicken, grilled chicken, and wrapped it up all nice for Philip’s lunch.

Oh…and we put together our 72 hour kits for FHE.

What a great weekend…I feel so accomplished. I even got up and went running this morning (ON TIME), showered, AND did my hair (not in a ponytail or messy bun).

Bring it on, Monday.

  2. you’re right! after that i feel extremely unproductive! LOL…

    this weekend i did some laundry, cleaned the bathrooms… and took some pictures of a pregnant chick.

    that pizza looks insane! must make it this week! 🙂

  4. that pizza looked super good and i’m totally gonna have to try that crust! about sallie…i’ve seen her once this whole semester in the seminar class. i’ll keep my eye out for her and try to remember to ask her about the movie. i’m not sure she even remembers me, but we’ll see! i’ll talk to emily about it and maybe between the 2 of us we can make it happen! 🙂

  6. Yes, thank you, I feel completely unproductive…haha you’re amazing! I made a homemade pie this week, but it was during my cooking class at BYU…I’m still going to count it as homemade though!
