This hearty lunch salad is perfect for everyday
Everyday I make a lunch salad. This is a really simple green salad full of protein, veggies, and a really simple 3-ingredient salad dressing.
How far ahead can I make this salad?
This is an easy make ahead recipe that I make in the morning, toss in the fridge, and it’s perfect for later that day.
I’ve never made it more than a day ahead, but if you leave the toppings and dressings off, you can make this up to three days before and store in the fridge.

Easy lunch salad
- Romaine lettuce, rinsed, dried, and chopped
- cherry tomatoes, sliced in half
- chopped cucumber
- grilled chicken, chopped (I use John Soules)
- sliced mushrooms
- 1/4 avocado
- diced carrots
- any other vegetables you’d like
Chop all the ingredients and place in a bowl. Store in the fridge in an air-tight container. I like THIS BOWL and use the small size.
Add toppings and toss right before eating.
How to add variety to this lunch salad if you’re eating it everyday
I eat basically the same thing for lunch everyday, but if you want to switch it up, try these ideas:
- Swap out the grilled chicken for shrimp, steak, or sausage
- Try a different dressing!
- Mix up your veggies and add any others in season
I love making this salad everyday because it fills me up for the whole afternoon until lunch, helps me stay focused (I try to avoid sugar, even natural sugars, during my work day because they totally throw my brain off), and makes my stomach feel happy.
