Time for this week’s dinner ideas! We got back from our last trip of the summer on Thursday, so this is a quick and easy menu of what we pulled from the freezer and pantry when we got home!

Summer Corn Chowder

After being gone for a whole week, I had to scrounge to find some food for dinner. I had all the ingredients for this summer corn chowder, which I’ve made a few times before, and it was a perfect, easy soup I could make in 30 minutes. I served it with crusty bread.

BBQ Chicken Pizza

On Friday’s we have pizza, and this is our favorite pizza right now. I do BBQ sauce, grilled chicken, frozen corn, jalapeños, and cheese, and then top with crispy onions and a drizzle of BBQ sauce. So tasty! I use this pizza dough for the crust.

Crockpot Chicken Cacciatore

Usually we go out on Saturdays, but since we’ve eaten out so many times over the last week, we decided to stay in and do an easy crockpot meal. This is one of our favorites and is super clean ingredients.

Pot Roast

You can’t go wrong with beef roast for dinner! I do a large chuck roast, baby potatoes, an onion, carrots, mushrooms, and beef broth, then cook for 8 hours on low. Super simple and delicious!

Chocolate and Salted Carmel Cookies

I always make a dessert on Sunday night, and these cookies look delicious…can’t go wrong with sea salt, caramel, and chocolate fudge!
