We tried some new recipes this week in our weekly menu! An incredible new soup recipe, a fun new dessert, and some amazing pasta.

We’re back in the swing of things with a weekly menu!

We were out of town a couple of weeks ago, and then busy the following week, so there hasn’t been a lot of meal planning lately. Mostly just fly by the seat of my pants at mealtime and see what I can conjure up out of the pantry. So I’m thrilled to have a weekly menu again!

This week we made some delicious things, including a new soup recipe that everyone went crazy about!

Mexican Beef Stew

This was a simple recipe that I made on Sunday. It called for ingredients I’d never used before, so we were all a little nervous, but it turned out great! The red Chile sauce had cinnamon and cloves in it, so it was definitely a new flavor — almost like a mole sauce, but I loved it. The kids were medium on it, as was Philip.

I served it with fresh cheese on top, with a side of fresh homemade tortillas. You can find my recipe for tortillas HERE.


Italian Sausage Soup with Orzo

WHOA. This soup was AMAZING. It was really simple to make, and had very basic ingredients, but the recipe notes said it was optional to add zucchini to the soup and then add croutons and parmesan cheese on top. We added all three (I toasted up my own croutons from crusty bread) and it was DELISH.

Philip said this soup needed to go into the regular rotation ASAP.

Portobello Mushroom Papardelle pasta

This was a fantastic pasta recipe, and a new recipe we’d never tried. It was easy to make, and the sauce was incredible. Definitely get some good pappardelle pasta, don’t sub out for another random noodle!

My kids didn’t love the mushrooms, but they liked the sauce and the noodles.

Mixed Berry Puff Pastry Tarts

We made these berry tarts on Sunday night, and my oldest son, B, who is 10, basically made them all by himself. They were fun to make, using the pastry dough, mixing the berries up, and assembling them all.

We served them with vanilla ice cream. Delish!!
